Prawns with Chilli Mint Avocado Sauce

INGREDIENTS
1 cup fresh mint leaves
1 small red chilli, seeded
2 large avocadoes, roughly chopped
Grated rind and juice 1 lime
2 cups natural yoghurt
3 kg cooked shelled prawns, chilled
Lime wedges to serve
Fresh mint leaves for garnish.
STEP 1
Place mint leaves and chilli into a food processor and process until finely chopped.
STEP 2
Add chopped avocado, lime rind, juice and yoghurt and process until smooth.
STEP 3
Serve chilled prawns with chilli mint avocado sauce and garnish with lime wedges and mint.
TIP
Chilli Mint Avocado Sauce can be prepared up to 1 day ahead and store in a sealed container in refrigerator.
Frozen prawns can be purchased 3 weeks in advance and stored in freezer. Leave to thaw in the refrigerator.
Fresh prawns can be purchased the day before required. Keep chilled in the refrigerator.
