
Coating the Top and Sides with Cream.
Spread the top and sides of the pavlova cake with a second layer of cream, making sure to smooth the sides with a spatula or large knife (the surface doesn’t need to be perfect).

Preparing and Placing the Strawberries.
Wash fresh strawberries in water and pat dry very well with paper towel. Place the pointy end of a bamboo skewer into the centre of each strawberry as shown. Stick the strawberry topped skewers into the pavlova, keeping the strawberries about 4-5cm above the cream.
Wrap the piece of thick flexible plastic around the base of the cake. Keep the pavlova cake refrigerated until required.

Just Before Serving.
Wrap ribbon or net around the base of the cake placing it over the flexible plastic and finish with a bow. Carefully place pieces of the Persian Fairy Floss in between the strawberries, hiding the bamboo skewers. Dust with icing sugar if preferred and serve.
