Butter Bean & Cranberry Salad with Sweet Balsamic Dressing

INGREDIENTS
2 x 300g cans Edgell Butter Beans, drained
1 punnet cherry tomatoes, halved
½ cup chopped spring onions
1 cup dried cranberries
4 cups wild rocket leaves
Dressing
½ cup olive oil
¼ cup balsamic vinegar
1 tablespoon brown sugar
1 teaspoon seeded mustard
STEP 1
Combine in a bowl, drained Edgell Butter Beans, halved cherry tomatoes, spring onions and cranberries. Cover and refrigerate.
STEP 2
Just before serving, toss through rocket leaves and combined dressing ingredients.
TIP
Dressing can be made a week in advance and stored in a sealed jar in the refrigerator.
Rocket leaves can be substituted with gourmet salad mix.
Thinly sliced celery and baby spinach leaves can be added to the salad.
