Fresh Rocket and Oven-Roasted
Tomatoes with Balsamic Glaze

SERVES 20
PREPARATION 30 minutes
COOKING TIME 15 minutes

INGREDIENTS
20 medium vine ripened tomatoes with calyx
Spray oil
200g rocket leaves
Dressing:
½ cup maple syrup
¼ cup white balsamic vinegar
1 teaspoon whole peppercorns

STEP 1
Place tomatoes on a baking tray and lightly spray with oil. Cook in a preheated oven at 200ºC for 15 minutes.

STEP 2
Place maple syrup, balsamic vinegar and peppercorns in a saucepan; bring to the boil and cook for 5 minutes. Allow to cool.

STEP 3
Serve cooked tomatoes with rocket leaves and drizzle with balsamic glaze.

TIP
Tomatoes look attractive with the green calyx left on.

Choose tomatoes that are uniform in size.

Dressing can be made up a week in advance and stored in a covered jar in the refrigerator.
