Chocolate Dipped Strawberries

SERVES 20
PREPARATION
30 minutes
COOKING TIME None required

INGREDIENTS
20 good sized strawberries
200g dark compounded chocolate, melted

STEP 1
Leave calyx attached to strawberries, wash strawberries and dry thoroughly.

STEP 2
Dip each strawberry into dark chocolate to cover two thirds. Drain off excess chocolate and place on foil or baking paper to set.

TIP
Use only compounded chocolate as this sets hard at room temperature and does not require refrigeration.

Ensure strawberries are perfectly dry as the smallest amount of water will ruin the chocolate. Have strawberries at room temperature for dipping.

Dipped strawberries are best done only 1 day in advance, store in a cool dry place (refrigerate only in warm humid conditions). Refrigerating dipped strawberries can cause them to ‘sweat’ or produce moisture.

For the more adventurous try double dipping the strawberries in dark, milk or white compounded chocolate for a visual effect.
