Baby Cos with Lemon Vinaigrette

SERVES 20
PREPARATION 15 minutes
COOKING TIME None required

INGREDIENTS
5 baby cos lettuce, cut each in quarters
½ cup extra light olive oil
Grated rind of 1 lemon
¼ cup lemon juice

STEP 1
Wash quarters of cos lettuce, drain well and place into plastic bags and refrigerate until required.

STEP 2
Combine oil, lemon rind and juice in a screw top jar and refrigerate until required.

STEP 3
Place a quarter of cos lettuce on a small serving plate, drizzle with lemon dressing and serve immediately.

TIP
Finely chopped chives can be added to the dressing.
