Summer Scented Melon

INGREDIENTS
1/2 seedless watermelon
1-2 teaspoons finely grated ginger
½ cup shredded fresh mint
2 cups natural yoghurt
1/3 cup brown sugar
20 sprigs of mint
STEP 1
Remove flesh from watermelon and cut into chunks or slices. Gently stir through or sprinkle with ginger and mint. Cover and chill.
STEP 2
Place a few slices of water melon in zip lock or freezer bags. Tie with ribbon and decorate with sprigs of mint. Keep refrigerated.
STEP 3
Combine yoghurt and brown sugar in a small bowl, stir well. Spoon into small dressing containers. Refrigerate.
TIP
This yoghurt topping goes wonderfully with stone fruits, banana or pineapple.
Watermelon is best prepared on the day or the night before.
The caramel yoghurt can be made 1-2 days in advance.
