Black Sesame Seed Rice

INGREDIENTS
2 ½ cups Jasmine rice
4 cm piece of ginger, peeled
2 teaspoons grated palm sugar
2 tablespoons rice wine vinegar
1 tablespoon black sesame seeds
Pickled ginger or fresh coriander for garnish
STEP 1
Cook rice following packet directions for boiling, adding the ginger to the water while cooking. Drain, discard ginger and rinse under cold water and drain well.
STEP 2
Dissolve palm sugar in vinegar then stir through rice. Stir in sesame seeds and season to taste.
STEP 3
Allow 1/3 cup of rice per person, place in individual sealable tubs, top with pickled ginger or a leaf of coriander and refrigerate.
TIP
Rice can be prepared and frozen, add garnish on thawing. If black sesame seeds are unavailable use toasted sesame seeds.
