Chick Pea & Nut Roast

A great vegetarian alternative for lunch or dinner.

Chick Pea & Nut Roast

ingredients

1 tablespoon oil
1 onion, peeled and finely chopped
1-2 cloves garlic, peeled and crushed
250g mixed nuts, finely ground
400g can Edgell Chick Peas, drained and finely ground
100g grated cheddar cheese
4 cups fresh breadcrumbs
1 tablespoon chopped fresh thyme or ½ teaspoon dry
¼ cup chopped fresh parsley
2 eggs
1 tablespoon yeast extract
2 tablespoons Leggo's Tomato Paste
Relish for serving

instructions

step 1

Heat oil in a frying pan, add onion and garlic and cook for 3 minutes or until onion is tender. Set aside.

step 2

In a large bowl combine all ingredients and place into a baking paper lined 25cm x 10cm loaf pan. Bake in a preheated oven at 180°C for 35-40 minutes or until browned. Cool for 10 minutes, cut into slices and serve with relish.
