Edgell Capsicum Dip

ingredients

2 x 125g cans Edgell Diced Capsicum, undrained
½ cup sugar
½ cup vinegar
1 clove garlic, peeled and crushed
125g cream cheese
Cracker biscuits

instructions

step 1

Place undrained Edgell Diced Capsicum, sugar, vinegar, and garlic into a small saucepan and heat until boiling.

step 2

Reduce heat and simmer over a low heat for approximately 45 minutes or until thick and syrupy, stirring occasionally. Allow to cool and spoon over cream cheese. Serve with cracker biscuits.

Capsicum mixture can be made 3-4 days before required. Place into a sealed container and store in the refrigerator.
