ingredients

2 slices prosciutto
1/2 x 1kg Birds Eye Country Harvest Spring Greens Mix, cooked following cooktop directions
400g can Edgell Butter Beans, drained
2 teaspoons butter
Juice of half a small lemon

instructions

step 1

Pan-fry or grill prosciutto until browned and crisp. Break into pieces and set aside.

step 2

Drain cooked Birds Eye Spring Vegetables and return to hot saucepan. Add drained Edgell Butter Beans, butter and lemon juice and heat for 2 minutes tossing gently. Serve garnished with crisped prosciutto.
