Chocolate Minature Plum Puddings

Perfect treat with coffee or as a gift for Christmas and simple to prepare!

Chocolate Minature Plum Puddings

ingredients

350g traditional Plum Pudding
50g packet diced almonds
1 tablespoon brandy or sweet sherry
150g milk chocolate, melted
15g Copha, melted
50g white chocolate melted, for decoration
3-4 red and green glace cherries, for decoration

instructions

step 1

Crumble plum pudding into a large mixing bowl. Add almonds and brandy. Stir until well combined. Roll 2 teaspoonfuls of mixture into balls and set aside; repeat with remaining mixture.

step 2

Dip the balls into combined melted chocolate and Copha, making sure excess chocolate drips back into the bowl. Place the coated puddings onto baking paper lined trays and allow to set at room temperature.

step 3

Decorate each pudding with a little drizzle of white chocolate and a small piece each of the red and green glace cherries.
