| 4 eggs ½ cup low fat milk 2 tablespoons plain flour 220g can Edgell Garden Peas, drained 410g can Edgell Tiny Taters - Lightly Minted, drained 1 tomato, sliced and halved |
Whisk eggs, milk and plain flour in a bowl, season with salt and pepper. Stir through Edgell Garden Peas.
Cut Edgell Tiny Taters into slices and place into a greased 12 x ½ cup muffin pan. Evenly spoon egg mixture over potato and top with a half slice of tomato. Bake frittatas in a preheated oven at 180°C for 20-25 minutes or until firm.
For an even tastier result, mix 2 tablespoons chopped fresh chives in step 1.
