Mix together Ally Pink Salmon, chilli, mint, coriander, eggs, lemon juice and yoghurt and season with salt and pepper.
Place pastry sheet onto bench. Spray 1 sheet of pastry with cooking spray. Fold pastry over (length ways) by a third then fold the other third on top.
Place 1 heaped tablespoon of filling on one corner. Diagonally fold the pastry over the filling and continue folding until the pastry forms a triangular parcel. Place on a greased oven tray. Repeat with the remaining pastry and filling.
Spray triangles with oil spray. Bake in preheated oven at 200°C for 10-15 minutes or until golden brown. Serve with tzatziki.
Add 1 teaspoon sumac (Middle Eastern spice) to add a "zing" to this dish.
