| 300g lean beef mince 1/4 cup Leggo's Tomato Paste 2 tablespoons dry breadcrumbs 2 teaspoons smoked paprika 2 tablespoons chopped fresh parsley 1 egg, lightly beaten 2 slices prosciutto 4 cloves garlic 4 teaspoons olive oil 2 cups mashed potato Cooked green beans for serving |
Combine beef mince, Leggo's Tomato Paste, dry breadcrumbs, smoked paprika, parsley and egg. Spoon mixture into 2 greased and baking paper lined 1 cup sized oblong mini cake pans. Place meat loaves and garlic cloves onto an oven tray. Drizzle garlic with 2 teaspoons olive oil.
Top meat loaves with prosciutto and bake in a preheated oven at 180°C for 20-25 minutes, (roast garlic for 15 minutes, then remove). Remove meat loaves from pans and skin from garlic. Spoon mashed potato onto 2 serving plates and top with roasted garlic. Add meat loaves and green beans. Drizzle each serve of "mash" with 1 teaspoon olive oil and serve immediately.
Round ovenproof dishes can be used in place of the mini cake pans or simply shape the meat into 2 loaves and bake as directed.
