Oat Crunchies

These biscuits are similar to Anzacs and have a really crunchy texture.

Oat Crunchies

ingredients

1 cup rolled oats
1 cup coconut
¾ cup brown sugar
1 cup plain flour
1 tablespoon boiling water
½ teaspoon bicarbonate of soda
2 tablespoons golden syrup
185g butter, melted

instructions

step 1

In a large bowl combine rolled oats, coconut, brown sugar and plain flour. Mix boiling water with bicarbonate of soda. Stir in golden syrup.

step 2

Pour syrup mixture and melted butter into dry ingredients. Stir until well combined.

step 3

Roll heaped teaspoonfuls of the mixture into balls. Place onto baking paper lined oven trays and flatten slightly. Bake in a preheated oven at
180°C for 10-12 minutes.

Dark brown sugar will give a more intense flavour and colour.
