Apple & Passionfruit Crumble

Tangy apple and passionfruit topped with a crunchy almond crumble.

ingredients

6 granny smith apples, peeled and diced
1 tablespoon sugar
1 teaspoon grated lemon rind
170g can John West Passionfruit Pulp in Syrup
1 cup whipped cream for serving

Topping:
½ cup plain flour
60g butter
1/3 cup brown sugar
¼ cup slivered almonds

instructions

step 1

Place apples into a saucepan with sugar and lemon rind, covered and simmer for 10 minutes or until tender, stirring occasionally. Reserve 2 tablespoons John West Passionfruit Pulp in Syrup, stir remainder into cooked apples. Spoon apple mixture into 4 x 1 cup pots.

step 2

Sift flour into a bowl, rub in butter and add sugar. Spoon topping mixture over apple and sprinkle with almonds. Bake in a preheated oven at 180°C for 20 minutes. Add reserved passionfruit to cream and serve with apple and passionfruit crumble.

Crumble can be cooked in a 20cm ovenproof dish. Delicious hot or cold.
