Mix together pork mince, curry paste, egg, coriander and peanuts. Divide pork mixture into 8 burgers and roll in coconut.
Place burgers onto a greased oven tray, spray with oil and bake in a preheated oven at 200°C for 15-20 minutes.
Serve pork burgers with sweet chilli sauce and garnish with coriander leaves and chopped peanuts.
