| 500g packet frozen Birds Eye Baby Beans 6-8 cherry tomatoes, halved 8-10 kalamata olives 1 small cucumber, finely diced ¼ cup toasted pinenuts 50g feta cheese, crumbled Dressing: 2 tablespoons olive oil 1 tablespoon red wine vinegar 1 tablespoon chopped fresh oregano 1 clove garlic, peeled and crushed Cracked black pepper |
Cook frozen Birds Eye Baby Beans following packet directions, drain and cool quickly in cold water, drain well.
Combine dressing ingredients in a large bowl and add beans tossing well. Arrange beans on serving plate with tomatoes, olives, cucumber and pinenuts. Sprinkle over crumbled feta cheese and serve.
