| 1 tablespoon oil 1 medium leek, finely sliced 2 cups arborio rice 6 cups boiling chicken stock 310g can Edgell Creamed Corn ¼ cup white wine 6 slices proscuitto, diced 1/3 cup grated parmesan cheese 2 tablespoons fresh thyme leaves |
Heat butter in a large pan, add leek and cook for 1-2 minutes or until tender. Stir in Arborio rice and cook for 1-2 minutes or until rice changes colour.
Gradually pour in boiling stock, one cup at a time, stirring continually. Add Edgell Creamed Corn and wine. Cover and simmer for 15-20 minutes, stirring occasionally.
Stir in proscuitto, parmesan cheese and thyme leaves and serve immediately.
If fresh thyme is not available fresh parsley or oregano can be used as a substitute.
