Trio of Antipasto

The quickest and most stylish antipasto platter, great for lunch as well.

ingredients

1/3 cup Leggo's Pesto - Traditional Basil
¾ cup extra light cream cheese
1 small baguette, sliced diagonally
¼ cup grated parmesan cheese
8 cherry tomatoes, quartered
Thinly sliced red salad onion
200g wedge fresh ricotta cheese
12 medium Lavosh breads
Baby basil leaves, for garnish

Quick & Easy Basil Pesto Dip

Combine 3 teaspoons Leggo's Pesto with cream cheese and stir to combine. Serve in a bowl garnished with small basil leaves.

Mini Pesto Parmesan Toasts

Place baguette slices on an oven tray and toast on one side until golden. Turn over and spread with 1½ - 2 tablespoons Leggo's Pesto. Sprinkle with parmesan cheese and grill until cheese is melted. Top with pieces of tomato and red onion and serve immediately garnished with small basil leaves.

Creamy Ricotta Bites

Top Lavosh bread or pita triangles with slices of ricotta, spread a little of the remaining Leggo's Pesto. Sprinkle with freshly ground black pepper and serve garnished with semi dried tomato and spring onion.
