| 2 tablespoons Leggo's Pesto - Traditional Basil 2 x 150g portions John West Chilled Atlantic Salmon portions 1 tablespoon balsamic vinegar 1 tablespoon olive oil 1 cup rocket leaves 6 mini roma tomatoes, halved ½ small cucumber, sliced ¼ red salad onion, thinly sliced |
Spread 1 tablespoon Leggo's Pesto over the top of each John West Chilled Salmon portion. Place on a paper lined oven proof dish and bake at 200°C for 15 - 20 minutes or until cooked.
Combine balsamic vinegar and oil to make a dressing. Combine salad ingredients and drizzle over dressing.
Serve salad topped with cooked salmon.
