| 625g packet fresh gnocchi 150g sliced lean bacon, roughly chopped 190g jar Leggo's Pesto - Sundried Tomato 1 cup light cream ¼ cup chopped fresh parsley |
Bring a large saucepan of water to the boil.
Cook bacon in a large non stick frypan until crisp and golden. Add Leggo's Pesto and cream and gently bring to the simmer.
Cook gnocchi in boiling water for 2 minutes or until it rises to the surface. Drain and add to simmering sauce with parsley and stir gently to combine. Serve immediately garnished with extra parsley.
Penne pasta can be substituted for gnocchi. For added heat, add 1 chopped red chilli when cooking bacon.

I made this with chicken instead of bacon. A super fast and delicious dinner.
