Peanut Slice

A scrumptious slice made quickly and easily in one bowl. A real melt and mix recipe!

Peanut Slice

ingredients

1 cup self-raising flour
¾ cup brown sugar
1 cup desiccated coconut
125g roasted peanuts, chopped
150g butter, melted

Coffee Glace Icing:
1 cup icing sugar
1 teaspoon instant coffee dissolved in 1½ teaspoons boiling water
½ cup extra chopped peanuts for decoration

instructions

step 1

Sift self-raising flour into a large bowl. Add brown sugar, coconut and peanuts. Stir in melted butter and mix well.

step 2

Press the mixture into lightly greased, baking paper lined slice tin 18cm x 28cm. Bake in a pre-heated oven at 190°C for 15-20 minutes.

step 3

Allow to stand in tin for 5 minutes before icing with combined coffee glace icing ingredients. Decorate with extra chopped peanuts.

To prevent cutting into the slice tin, line the base and 2 sides with baking paper. When cooked and cooled simply lift the slice out and then cut into pieces.
