Coconut and lime gelato - just delicious!
| 400ml can coconut cream 1/3 cup caster sugar Grated rind and juice of 1 lime 2 fresh mangos, peeled and sliced 170g can John West Passionfruit Pulp in Syrup Lime wedges for serving |
Mix coconut cream, caster sugar, rind and juice of lime together and pour into a 20cm cake pan. Freeze until firm.
Place mango slices into 6 serving dishes and drizzle with John West Passionfruit Pulp in Syrup.
Using a fork scrape shavings of the gelato onto mango and passionfruit; add lime wedges and serve immediately.
Serve the gelato over fresh fruit salad for a refreshing change.
Allow for extra freezing time in preparation.
