Atlantic Salmon with Sweet Chilli & Lime

Try this as a delicious starter on its own, or as part of an antipasto platter.

ingredients

2 tablespoons sweet chilli sauce
Juice of 1 lime
½ teaspoon fish sauce
1 pack John West Chilled Atlantic Salmon, cut into strips
½ Lebanese cucumber, de-seeded and finely chopped
1/3 cup finely chopped roasted salted cashews

instructions

step 1

Combine sweet chilli sauce, lime juice and fish sauce in a medium bowl. Add John West Atlantic Salmon and gently toss; allow to marinate, refrigerated, for 30 minutes.

step 2

Heat a frying pan on a medium heat; add the salmon and stir-fry until cooked through and glaze has caramelised.

step 3

Combine cucumber and cashews in a small bowl. Arrange a few slices of salmon on each antipasto plate, sprinkle with cucumber mix and serve.

For extra heat add a finely diced chilli to the marinade.
