| 6 eggs, beaten 1 tablespoon butter 425g can Edgell Asparagus Green Spears, drained 50g Goat's cheese, crumbled 1 tablespoon chopped fresh chives |
In a bowl whisk eggs and season with salt and pepper. Melt butter in a frying pan, add whisked eggs and cook for 4-5 minutes or until omelette has almost set. Carefully turn over and cook a further 1-2 minutes (or grill for 1-2 minutes).
Divide omelette into 2 halves and slide onto warm serving plates. Top with drained Edgell Asparagus Green Spears and sprinkle with Goat's cheese. Serve sprinkled with chives.
Use as much asparagus as desired. Any remaining asparagus can be mashed and blended with cream cheese as a sandwich filling.
