| 1 tablespoon instant coffee 1 tablespoon hot water 250g mascarpone cheese 2 tablespoons honey 300ml thickened cream 3 tablespoons icing sugar Vanilla ice cream Cocoa for dusting |
Dissolve coffee in hot water and place in a large bowl with mascarpone cheese and honey; stir until thoroughly combined and smooth.
In a medium bowl whip cream and icing sugar until firm. Fold cream into coffee and cheese mixture. Chill until ready to serve. Spoon a little of the coffee mixture into serving cups or bowls until one third full. Place a scoop of vanilla ice cream on top and cover with remaining coffee mixture.
Dust with cocoa and serve with almond bread and custard if desired.
