Steam, boil or microwave sweet potato until tender, mash and stir in chopped fresh parsley.
Spray a frying pan lightly with oil. Heat pan and cook beef until browned. Stir in Birds Eye Country Harvest Vegetables and Leggo's Sugo di Pomodoro. Simmer for 5 minutes, stirring occasionally.
Spoon meat mixture into 4 greased 1 cup sized ovenproof dishes. Divide the mashed sweet potato evenly between the 4 dishes and spread over meat. Sprinkle with cheese and bake at
180°C for 10 -15 minutes or until cheese melts.
Lean chicken mince can be used instead of the beef mince.
