ingredients

250g sweet potato, peeled and cut into pieces
2 teaspoons chopped fresh parsley
Spray olive oil
250g lean minced beef
1½ cups frozen Birds Eye Country Harvest Peas & Supersweet Corn
1 cup Leggo's Sugo di Pomodoro - Classic Tomato
2 tablespoons grated low fat tasty cheese

instructions

step 1

Steam, boil or microwave sweet potato until tender, mash and stir in chopped fresh parsley.

step 2

Spray a frying pan lightly with oil. Heat pan and cook beef until browned. Stir in Birds Eye Country Harvest Vegetables and Leggo's Sugo di Pomodoro. Simmer for 5 minutes, stirring occasionally.

step 3

Spoon meat mixture into 4 greased 1 cup sized ovenproof dishes. Divide the mashed sweet potato evenly between the 4 dishes and spread over meat. Sprinkle with cheese and bake at
180°C for 10 -15 minutes or until cheese melts.
