Spray a large frying pan with oil. Add rice, ham and cooked Birds Eye Country Harvest Vegetables and heat through for 2-3 minutes, stirring occasionally.
Push rice mixture to one side and spray pan again with oil. Pour in eggs and cook until set stirring occasionally.
Stir soy sauce and egg through the rice and serve in bowls garnished with spring onion.
A variety of rices are now available pre-cooked ready to simply microwave to heat through to save time and messy saucepans.
