ingredients

Spray oil
1½ cups cooked brown rice
50g lean ham, thinly sliced
½ x 500g packet frozen Birds Eye Country Harvest Carrot, Peas, & Corn, cooked following packet directions.
2 eggs and 1 tablespoon water lightly beaten together
1 tablespoon salt reduced soy sauce
Thinly sliced spring onions for garnish

instructions

step 1

Spray a large frying pan with oil. Add rice, ham and cooked Birds Eye Country Harvest Vegetables and heat through for 2-3 minutes, stirring occasionally.

step 2

Push rice mixture to one side and spray pan again with oil. Pour in eggs and cook until set stirring occasionally.

step 3

Stir soy sauce and egg through the rice and serve in bowls garnished with spring onion.
