Sundried Tomato Risotto

A quick and easy risotto; great for lunch, or a light dinner.

ingredients

1 tablespoon oil
2 small leeks, thinly sliced
1½ cups arborio rice
4 cups boiling vegetable or chicken stock
190g jar Leggo's Pesto - Sundried Tomato
1 zucchini, diced
Shaved parmesan cheese for garnish

instructions

step 1

Heat oil in a saucepan, add leek and cook for 1-2 minutes or until tender. Add rice and stir for 1-2 minutes or until rice changes colour.

step 2

Gradually pour in boiling stock, one cup at a time, stirring continually. Stir in contents of jar Leggo's Pesto - Sundried Tomato and zucchini. Cover and simmer for 15 minutes, stirring occasionally. Serve sprinkled with shaved Parmesan cheese.
