| 1 tablespoon oil 2 small leeks, thinly sliced 1½ cups arborio rice 4 cups boiling vegetable or chicken stock 190g jar Leggo's Pesto - Sundried Tomato 1 zucchini, diced Shaved parmesan cheese for garnish |
Heat oil in a saucepan, add leek and cook for 1-2 minutes or until tender. Add rice and stir for 1-2 minutes or until rice changes colour.
Gradually pour in boiling stock, one cup at a time, stirring continually. Stir in contents of jar Leggo's Pesto - Sundried Tomato and zucchini. Cover and simmer for 15 minutes, stirring occasionally. Serve sprinkled with shaved Parmesan cheese.
Add 1½ cups cooked chicken strips in at step 3 with Leggo's Pesto.
