ingredients

1 tablespoon olive oil
1 clove garlic, peeled and crushed
1 medium onion, peeled and thinly sliced
1 small red capsicum, cut into thin strips
1 small red chilli, finely chopped
1 tablespoon sugar
1 tablespoon water
400g can tomato pieces, undrained
1 tablespoon Leggo's Tomato Paste
1 tablespoon balsamic vinegar or red wine vinegar

instructions

step 1

Heat oil in a saucepan add garlic, onion, capsicum and chilli and cook for 5 minutes or until softened.

step 2

Add sugar, water, tomato pieces and Leggo's Tomato Paste and simmer for 5 minutes. Add vinegar and simmer for a further 5 minutes, or until thickened. Chutney will keep for 1-2 weeks in the refrigerator.
