A combination of roasted vegetables and potato wedges makes a great accompaniment to a BBQ.

ingredients

½ x 1kg packet frozen Birds Eye Golden Crunch Wedges
300g pumpkin pieces
2 small zucchini, thickly sliced
1 red capsicum, cut into chunky pieces
1 small red onion, peeled and cut into wedges
Spray oil
2 teaspoons dried oregano
Cracked black pepper

instructions

step 1

Place frozen Birds Eye Golden Crunch Wedges into a large baking tray with prepared vegetables, spray with oil and sprinkle with oregano and cracked black pepper.

step 2

Bake in a preheated oven at 220°C for 35 minutes. Serve as a vegetable accompaniment to meats or as a BBQ offering.

Other suggested vegetables suitable for this dish could be sweet potato, parsnips, fennel or squash. Drizzle with balsamic vinegar for a tang.
