Christmas Pudding with Toffee Shards

Everyone loves homemade toffee!

Christmas Pudding with Toffee Shards

ingredients

½ cup caster sugar
¼ cup brown sugar

instructions

step 1

Place under a preheated grill set at a medium heat, and cook for a few minutes until the sugar has melted and turned to toffee. DO NOT LEAVE the toffee unattended! Remove and set aside to cool.

step 2

The toffee can be gently eased off the tray usually in one large piece with a sharp knife. Break into shards.

To store the toffee; place into an air tight container in single layers with baking paper in between, adding a couple of sachets of silica gel crystals (these will absorb the moisture and are available from cake decorating shops, some chemists etc).
