Salmon Avocado and Lime Cocktail

A light and easy to prepare starter for entertaining with the ever popular John West Red Salmon.

ingredients

415g can John West Red Salmon, drained and flaked
¼ cup chopped water chestnuts
1 lime
6 butter lettuce leaves
1 small avocado sliced
¼ cup whole egg mayonnaise
½ teaspoon sugar

instructions

step 1

Gently toss together the flaked John West Red Salmon, water chestnuts and finely grated rind of the lime.

step 2

Place lettuce leaves onto serving dishes. Arrange avocado and salmon mixture on lettuce. Cover and chill until ready to serve.

step 3

Combine mayonnaise with 3 teaspoons lime juice and the sugar. Drizzle over the salmon on serving.

Avocado can be substituted with mango. Finely shredded lime rind can be used as a garnish.
