Parmesan Crusted Chicken with Pesto Mayo

ingredients

12 chicken tenderloins
Seasoned flour
2 eggs, beaten
½ cup dry breadcrumbs
½ cup shredded parmesan cheese
Spray oil

Pesto Mayo:
1/3 cup mayonnaise
2 tablespoons light sour cream
2 tablespoons Leggo's Pesto - Traditional Basil

instructions

step 1

Dust chicken tenderloins with seasoned flour. Dip in beaten eggs and coat well with combined breadcrumbs and parmesan cheese.

step 2

Spray coated chicken with oil and place on a baking paper lined tray and bake in a preheated oven at 200°C for 15 minutes.

step 3

Combine Pesto Mayo ingredients and spoon into a serving bowl. Serve the cooked chicken with the prepared mayo.

Chicken breast fillets can also be used for this recipe, cut each one into 2 thin pieces and halve lengthways.
