| 2 teaspoons oil 1 cup frozen Birds Eye Sliced Onions 1 clove garlic, peeled and finely chopped 8 sausages, cooked and sliced diagonally 400g can tomato pieces, undrained 1 tablespoon Leggo's Tomato Paste 1 teaspoon chopped fresh oregano 1 tablespoon chopped fresh basil 3 cups prepared hot mash potato 2 tablespoons chopped fresh parsley for garnish |
Heat oil in a large saucepan, add frozen Birds Eye Sliced Onions and garlic and cook on a low heat for 5 minutes. Add sausages and cook for a further 5 minutes.
Stir in undrained tomato pieces, Leggo's Tomato Paste, oregano and basil, simmer for 5 minutes, stirring occasionally.
To serve, place hot mashed potato into serving bowls then top with tomato mixture. Sprinkle with parsley.
Chicken and rosemary sausages can be substituted for the continental sausages.
