Onion and Basil Frittata

Onions are slowly pan cooked until caramelised and then used as the base of a delicious frittata.

ingredients

1 tablespoon oil
6 medium onions, sliced
8 eggs, beaten
¾ cup milk
¼ cup Leggo's Pesto - Traditional Basil
¾ cup grated tasty cheese

instructions

step 1

Heat oil in a large frying pan, add onions and cook for 10-15 minutes stirring occasionally or until golden brown, set aside.

step 2

In a medium bowl beat together eggs, milk and Leggo's Pesto. Pour egg mixture onto onions in pan and cook over a medium heat for 4-5 minutes. Sprinkle with grated cheese and finish cooking under a preheated grill for 3-4 minutes or until frittata is set.

step 3

Slide frittata out of pan onto a serving platter and serve hot or cold.
