Italian Bean & Pasta Salad

Bow tie pasta, Edgell Four Bean Mix, sundried tomatoes, olives and pinenuts tossed in a dressing!

ingredients

250g bow tie pasta
420g can Edgell Four Bean Mix, drained
¼ cup chopped sundried tomatoes
10 whole black olives
2 spring onions, chopped
2 tablespoons toasted pinenuts for garnish

Dressing:
1 tablespoon chopped fresh basil
1 tablespoon vinegar
2 tablespoons olive oil
¼ teaspoon sugar
Cracked black pepper

instructions

step 1

Cook pasta following packet directions, drain, rinse in cold water and allow to cool.

step 2

In a large bowl combine drained Edgell Four Bean Mix, sundried tomatoes, black olives, spring onions, and cooled pasta.

step 3

Pour combined dressing ingredients over pasta salad, tossing gently. Serve salad sprinkled with pinenuts.

For additional flavour pan-fry 6 slices of salami cut into strips and add at step 2.
