Pesto Rubbed Double Lamb Cutlet

Small racks of lamb flavoured with Leggo's Pesto; just right for a special occasion or a family.

Pesto Rubbed Double Lamb Cutlet

ingredients

4 double lamb cutlets, trimmed
1 tablespoon Leggo's Pesto - Sundried Tomato
4 large sprigs fresh rosemary
4 slices prosciutto
4 bamboo skewers
Grated rind of 1 lemon
2 tablespoons chopped parsley

instructions

step 1

Cut a slit in each lamb rack between the bones without cutting all the way through, spread 1 teaspoon of Leggo's Pesto and a sprig of rosemary into the slit and press lamb back together. Wrap a slice of prosciutto around the lamb and secure with a bamboo skewer.

step 2

Place on a baking tray and cook in a preheated oven at 220°C for 15 - 20 minutes.

step 3

Combine lemon rind and parsley and serve with the lamb.

  • If lamb cutlets are very small you may need to allow 2 double cutlets per serve.

  • Serve with parmesan mash or oven roast potatoes.
