Asian Frittata

Frittata with a real Asian flavour is a welcome addition to a meal.

ingredients

1 tablespoon oil
500g packet frozen Birds Eye Stir Fry - Chow Mein
8 eggs, beaten
2 tablespoons Thai sweet chilli sauce
2 spring onions, diagonally sliced
2 tablespoons chopped fresh coriander

instructions

step 1

Heat oil in a large frying pan, add frozen Birds Eye Stir Fry and stir-fry for 3-4 minutes. Pour beaten eggs evenly over vegetables in pan and cook for 4 minutes or until egg has just set.

step 2

Place under a preheated grill; cook for 2 minutes or until golden brown. Drizzle chilli sauce over omelette, sprinkle with spring onions and coriander. Serve cut into wedges.

The addition of cooked and drained 2 minute noodles in step 1 makes a heartier meal.
