Tuna Pasta with Oven Roasted Vegetables

Pasta tossed with tuna, roasted pumpkin, onions and capsicum, drizzled with a low fat dressing.

Tuna Pasta with Oven Roasted Vegetables

ingredients

425g can Seakist Tuna in Springwater
250g pumpkin, cut into 3cm pieces
1 onion, peeled and cut into wedges
1 small zucchini, sliced
1 red capsicum, de-seeded and cut into chunky pieces
Olive oil Spray
1 teaspoon dried thyme
3 cups dry penne pasta
2 tablespoons low fat Italian Salad Dressing

instructions

step 1

Drain Seakist Tuna and flake into chunky pieces. Place vegetables on a baking tray. Spray with olive oil and sprinkle with thyme, salt and cracked pepper.

step 2

Bake in a preheated oven at 200°C for 20 minutes. Cook pasta in a saucepan of boiling water and cook until tender.

step 3

Drain pasta and return to hot pan, gently stir in tuna and vegetables and drizzle with salad dressing.
