Crispy Green Salad with Creamy Dressing

ingredients

3 large iceberg lettuces, coarsely shredded
2 cups sliced celery
2 cucumbers

Creamy Spring Onion Dressing:
1 cup egg mayonnaise
½ cup light cream
2 tablespoons lemon juice
½ cup finely chopped spring onion

instructions

step 1

Place lettuce and celery in a large bowl or container add enough cold water to cover vegetables then seal container. Refrigerate over night.

step 2

Drain lettuce and celery well, preferably drying in a salad spinner. Place in a serving bowl, add cucumber and toss well.

step 3

Combine dressing ingredients adding a little water to thin if necessary. Season with salt and pepper. Just before serving, pour dressing over salad and lightly toss.

Creamy Spring Onion Dressing can be made up to 3 days ahead and stored in a sealed jar in the refrigerator. Covering the lettuce and celery with water and refrigerating overnight will ensure a crispy salad.
