ingredients

20 medium vine ripened tomatoes with calyx
Spray oil
200g rocket leaves

Dressing
½ cup maple syrup
¼ cup white balsamic vinegar
1 teaspoon whole peppercorns

Pesto Chicken with Prosciutto Crumb Recipe

instructions

step 1

Place tomatoes on a baking tray and lightly spray with oil. Cook in a preheated oven at 200°C for 15 minutes.

step 2

Place maple syrup, balsamic vinegar and peppercorns in a saucepan; bring to the boil and cook for 5 minutes. Allow to cool.

step 3

Serve cooked tomatoes with rocket leaves and drizzle with balsamic glaze.

Tomatoes look attractive with the green calyx left on. Choose tomatoes that are uniform in size. Dressing can be made up a week in advance and stored in a covered jar in the refrigerator.
