Creamy Red Capsicum & Salmon Linguine

A creamy sauce with capsicum and sun-dried tomatoes makes this dish extra special.

Creamy Red Capsicum & Salmon Linguine

ingredients

150g linguine or fettuccine
1 tablespoon butter
½ red capsicum, chopped
1 tablespoon chopped sun-dried tomatoes
½ cup light cream
1 tablespoon butter, extra
1 small zucchini, sliced
210g can John West Red Salmon, drained and flaked

instructions

step 1

Cook linguine in boiling water until tender.

step 2

Melt butter and cook capsicum until soft, place into a blender or food processor with sun-dried tomatoes and cream, process until almost a puree.

step 3

Heat extra butter in a small frying pan, add zucchini and cook until tender. Add capsicum sauce and gently stir through drained and flaked John West Red Salmon and heat through. Serve sauce spooned over hot linguine.

As a substitute for zucchini, gently cook 2 chopped spring onions.
