| 250g spaghetti 1 tablespoon oil 1 leek, finely sliced 12 shelled green prawns ½ cup white wine ½ cup light cream 1 cup frozen Birds Eye Baby Peas 2 cups baby spinach leaves 1 lemon wedges for garnish |
Cook spaghetti following packet directions. While pasta is cooking prepare sauce.
Heat oil in a frying pan, add leek and cook for 2 minutes or until softened. Add prawns and cook for a further 1 minute.
Add wine, cream, frozen Birds Eye Baby Peas and spinach to pan and simmer for 2 minutes stirring continually. Drain pasta add to pan and toss through sauce. Serve garnished with a lemon wedge.
250g chicken breast fillet sliced can be used as an alternative to prawns.
Increase the cooking time for the chicken in step to 2 to 4 minutes.
