Chicken Primavera

This recipe is perfect served with crusty Italian bread and crisp green salad.

ingredients

500g dry Penne pasta
1 tablespoon oil
8 chicken tenderloins, each cut into 3
1 zucchini, sliced
10 green beans, sliced
575g jar Leggo's Pasta Sauce - Napoletana
½ cup basil leaves, loosely packed

instructions

step 1

Cook pasta following packet directions. Meanwhile make the sauce.

step 2

Heat oil in a large frying pan; add chicken and cook for 3 minutes or until well browned. Add zucchini and beans and cook for a further 2-3 minutes.

step 3

Stir in Leggo's Pasta Sauce, cover and simmer for 5 minutes, stirring occasionally.

step 4

Drain pasta; add to sauce with basil and cook for a further 2 minutes or until heated through.

If chicken tenderloins are not available use 2 chicken breasts cut into strips.
