Spinach and Pinenut Fettuccini

A delicious fettuccine pasta with pinenuts, spinach and chunky pasta sauce from Leggo's is perfect for vegetarians or for a lighter style dinner or luncheon dish.

Spinach and Pinenut Fettuccini

ingredients

375g dry fettuccine pasta
50g pinenuts
575g jar Leggo's Pasta Sauce - Napoletana
2 cups baby spinach leaves
Grated parmesan cheese for garnish

instructions

step 1

Cook pasta following packet directions.

step 2

Heat a large non-stick pan and cook pinenuts for 1-2 minutes or until golden brown.  Stir in Leggo's Pasta Sauce and spinach, cook for 2-3 minutes or until heated through.

step 3

Drain pasta; add to sauce and heat for a further 2 minutes tossing gently to combine.  Serve garnished with parmesan cheese.

Add half a cup of chopped semi dried tomatoes in step 3 for a richer flavour.
