Cauliflower Salad

A delicious salad of cucumber and celery, topped with roasted cashew nuts and drizzled with a yoghurt mayonnaise.

ingredients

500g packet frozen Birds Eye Cauliflower
½ large continental cucumber, thickly sliced
3 sticks celery, diagonally sliced
1/3 cup roasted cashew nuts
1 tablespoon chopped fresh parsley for garnish

Dressing
¼ cup mayonnaise
½ cup natural yoghurt

instructions

step 1

Cook frozen Birds Eye Cauliflower following packet directions, set aside to cool.

step 2

In a bowl combine cooled cauliflower, cucumber and celery.

step 3

Gradually stir yoghurt into mayonnaise until smooth. Pour dressing over salad and toss gently; spoon onto a serving plate and sprinkle with cashew nuts and parsley.
