Smoked Chicken and Vegetable Frittata

Creamy egg mixture filled with Peas, Corn & Capsicum with smoked chicken breast & cheese topping.

Smoked Chicken and Vegetable Frittata

ingredients

30g butter
1 small leek, washed well and thinly sliced
500g pack frozen Birds Eye Country Harvest - Peas, Corn & Capsicum
125g smoked chicken breast fillet, thinly sliced
6 eggs, lightly beaten
½ cup cream
¼ cup chopped fresh herbs
¼ cup shredded parmesan cheese
Crisp green salad, for serving

instructions

step 1

Melt butter in a 25cm non stick frying pan and gently cook leek until softened, approximately 5-8 minutes. Add frozen Birds Eye Country Harvest vegetables and cook for a further 2 minutes. Add smoked chicken and combine.

step 2

Combine eggs, cream and herbs in a bowl and season to taste. Pour egg mixture over vegetables and cook uncovered over low heat for 10 minutes or until egg mixture is almost set but the top is still runny.

step 3

Sprinkle frittata with parmesan cheese and transfer to a hot grill and cook for 4-5 minutes or until frittata is golden and just set. Stand for 5 minutes before slicing and serving with a crisp green salad.

Smoked chicken can be purchased from most supermarkets, and is available in the meat cabinet at the supermarket or from the deli. It is also available from most butchers.

If smoked chicken is unavailable, substitute with cooked BBQ chicken breast for a 'smoky' flavour.
